Sustainability in Hospitality, a Case Study Presented in Centuripe
During the final Green2Grow event in Centuripe, participants were introduced to the sustainability journey of Boutique and Gourmet Hotel Orso Grigio, a family-run hotel located in San Candido, South Tyrol, Italy.
The case study demonstrated how a small hospitality business can transform long-standing environmental and social values into structured, measurable and independently verified sustainability practices. Managed by the ninth and tenth generations of a family that has welcomed guests since 1745, the hotel combines its historic identity with a modern approach to responsible tourism.
The presentation highlighted a wide range of practical measures implemented by the hotel, including the use of renewable electricity and biomass district heating, local and regional food sourcing, waste-prevention initiatives, water-saving measures and sustainable mobility options for guests. Particular attention was also given to fair employment practices, staff engagement and transparent communication with visitors.

Final event
Green2Grow friends meet in Centuripe for the project’s Final International Event
The Green2Grow project reached an important milestone with its successful final international event, held in Centuripe, Sicily, Italy. The event brought together project partners, tourism professionals, educators, public authorities and local stakeholders to celebrate the project’s achievements and discuss the future of sustainable tourism and green skills development across Europe.
Hosted by the Italian partners, the event showcased the key results of the project and provided an opportunity for participants to exchange experiences, strengthen international cooperation and explore ways to ensure the long-term impact of the Green2Grow initiative.
Throughout the event, the partnership presented the project’s main outcomes, including the Green2Grow Skills Roadmap, which identifies the key sustainability challenges and skills needs within the tourism sector, and the Green2Grow VET Programme, developed to equip tourism professionals, destination management organisations, local authorities and community stakeholders with practical knowledge and tools to support the green and digital transition.
The event also featured the presentation of the project’s online learning platform, ensuring that the Green2Grow training materials and educational resources will remain freely accessible to learners and organisations across Europe beyond the project’s lifetime.
Set against the unique cultural and historical backdrop of Centuripe, the event also celebrated the rich local heritage of Sicily, demonstrating how cultural identity and sustainable development can successfully go hand in hand.
The final event marked not only the conclusion of the Green2Grow project but also the beginning of a lasting legacy. The partnership remains committed to promoting the project’s results and encouraging their uptake by tourism professionals, vocational education providers, public authorities and local communities across Europe.

G2G Celebrates Erasmus Days with event on Sustainable Tourism Skills
On 17 October 2025, the Green2Grow project joined the international celebrations of Erasmus Days by hosting an online Info-Day dedicated to the green transition in tourism and the skills needed to make it happen.
The event gathered project partners, tourism professionals, educators, and local stakeholders from Portugal, Alabania, Greece, Turkey, Cyprus, Italy, and Bulgaria, to discuss how the sector can respond to climate change and biodiversity loss through innovation, collaboration, and capacity building.
Participants were introduced to the Green2Grow approaches and methodology, the implemented activities, the Roadmap to Skills Development and the Training Programme designed to strengthen the green and digital competencies of Destination Management Organisations (DMOs), public authorities, and tourism businesses.

ROADMAP TO SKILLS DEVELOPMENT
The Skills Roadmap is designed as a strategic response to the barriers for the tourism sector. It highlights the opportunities that sustainability and green innovation can offer—not only for reducing tourism’s environmental footprint but also for improving service quality, business resilience, and destination attractiveness.
This Roadmap outlines a practical, phased approach to capacity-building, tailored to the needs of Destination Management Organizations (DMOs), public authorities, and tourism businesses. It aims to guide stakeholders in embedding sustainability at the heart of their operations, decision-making, and service delivery—equipping them with the competencies needed to lead the sector’s green transformation.
Ultimately, this document is a call to action: to invest in people, to modernize systems, and to collaborate across borders for a tourism sector that is not only economically vibrant but also environmentally responsible and socially just.

NEEDS ANALYSIS REPORT
The purpose of this deliverable is to identify the structural and operational challenges the tourism actors face, along with the resources and opportunities they can leverage to support a systemic transition.
Through a critical assessment of the strengths, weaknesses, and emerging priorities in each local tourism ecosystem, the report offers a strategic overview of the actions needed to move toward regenerative tourism—a model that goes beyond sustainability to actively restore ecosystems, empower communities, and enhance the long-term value of local destinations.
